Die Lösung für das Problem, das mehrfach gemeldet wurde (weiße Schrift in den Beschreibungen im Word Add-In) hängt tatsächlich mit dem Dark Mode zusammen.
Damit die Schrift wieder lesbar wird, muss der Dark Mode systemweit (Windows) deaktiviert werden und zusätzlich in den Word Einstellungen unter "Konto":
Aktiviert werden muss: Systemeinstelung verwenden.

I have contact support about the problem. They wanted me to send through a whole lot of information about my computer that I wasn't necessarily comfortable sharing, like details about my OS and antivirus.
